I recently sent a email to Druid for my stat reset. No problem there, nothing said it messed up.
My question is, when do my stats reset? Is it when the server gets a reboot? Or whenever Druid feels like it?

Hiya Boo,
This sort of thing takes time. Dru and Shan have lives that are separate from server life and have to fit all of this into a tight schedule. Just be patient it usually will take effect in a couple of weeks. One day you'll join in and soon realize that something has changed.

I've figured that the way things are, it's better to just go with it if it's something you'd be able to fix in a level or two. Unless you've accidentally purchased a skill you'll never purchase, or raised a stat you didn't intend to raise for another 10 - 15 days of play, then just go with it.
As Chyster mentioned, they're busy, and stat adjustments aren't an immediate thing.

Resets are like this ... you email .. ,then you wait .continue to play untill they have time to reset the server.,

you mean your class ?
IIRC Druid isnt going to reset your class.
if you want a different class, you'll have to change your name.

Player classes are mixed and set in concrete. You can reset your stat points but not your player class.

I pulled down DruidsRPG188 and set it up in instant action for testing. I pick a class, level up once or twice, then hit the reset button for just my personal stats. Sure enough, the class I was is gone as well so I could change classes by reverting myself to the starting level.

While that may be true, Dru has made it quite clear (outside of AM's that want to become WM's due to changes coming in 190) that the "manual" resets (where you email that you want some points back to spend elsewhere) will in no way include anything involving a class change.
So while not really "set in stone", you basically have to go all the way back to the beginning (whatever that is - it's been long enough that I've forgotten what a newbie looks like from the the newbie's point of view) to change classes.
In which case, unless you're super attached to one name, you should just change names and start a new character in the new class.
