Welcome to the Labor Day weekend............currently, we have smoked 6 pounds of salmon, 12 Cornish game hens, and 3 pounds of beef short ribs.
Tomorrow, we start the country style pork ribs (15 pounds) and will finish up with a few racks of pork spare ribs (about 10 pounds).

After discussing it with the boss lady, we put the old smoker out on the street with a sign that said "free" and it was gone in 15 minutes. Even before I had time to order a new and larger one from Landmann. We will baptize it with another lot of salmon next weekend.

Brisket burnt ends is my fave... ok, smoked meat in general works well with me...havnt had smoked salmon in forever.
