You might try playing with the settings on medic. Medic could be amped up a lot more than it is for your configuration. You'll have to decompile the classes to see where the settings are, but you can set the medic weapon to provide significantly more xp and healing. You could also turn off all the monster skills, or limit the medic to a single monster at a time.

FragFest is significantly different than DC and we manage to run all 3 classes without any major unbalance or holes.
My guess is a server would have to be extremely different in it's setup in order for the classes to be unworkable. But as Druid has stated the classes and skills can be re-compiled and/or removed.
