And totally accidentally, all of these movies are either set in midieval times, or have midieval scenes in them.

If I am correct, that is the newer version of the movie, and the character was merlin (sam neil) I believe. (Watching the Sci-fi channle were we bot? )

Okay so the first one we've figured out is:
Merlin (as played by Nicol Williamson, the funniest yet most "Merlin" Merlin I've seen) in "Excalibur" (1981). This movie also starred Patrick Stewart as Leondegrance and Liam Neeson as Gawain.
Additional clues and quote from the same character:
2. "Sir, the truth is, I talk to God all the time, and, no offense, but he never mentioned you." Movie date: 1985.
3. "He cares about these helpless mortals?" Movie date: 1986

OH, I think I know number 3! The Highlander is the movie, the character is the Kergan (can't remember the actors name off hand. He was the cop in pet cematary 2, and many others. Excelent bad guy.) Two of my favorite lines from him:
"I've got one thing to say, It's better to burn out then to fade away!" (at the end of the church scene, same scene where he says the above quote)
"Boo" (while driving the stolen cady with the old lady in it.)
